THE HUNT

We’re passionate about quail hunting here. With 19 carefully managed fields spread across 27,000 acres, our coveys experience minimal pressure and the birds fly extremely well. Our world-class pointers run with grace and style before locking on a covey, and our eager retrievers happily fetch the birds you shoot. We have 15 jeeps lined up to take you on a quail hunt like none you’ve ever experienced.

If you enjoy hunting other species, Gilchrist has abundant whitetail deer to chase in the fall, with rifle, archery or muzzleloader seasons. Call up one of our hard-gobbling Osceola turkeys in the spring. Or for something truly unique, hunt something with teeth; like one of our wild boars, or even a Florida gator.

DINING

Executive chef Jenae Christiansen and her team are dedicated to making dining one of the highlights of your Gilchrist experience. Custom-prepared entrees and appetizers made from wild game are always a highlight and the results from Chef Jenae’s diverse training and expertise guarantees you’ll rave about every meal, whether the menu is based on local or exotic fare.

Our wine cellar is well-stocked with traditional favorites and classic bottles, as well as offerings from exciting new vineyards, both foreign and domestic. The executive bar at Gilchrist is a place to sit, relax, and enjoy a top-shelf cocktail prepared by our expert mixologist.

AFTER THE HUNT

Cypress House, Eagle’s Nest and Sandhill Crane accommodations: Pleasingly landscaped to help them blend in to their natural surroundings, these lodges feature firepits, covered porches, and raised walkways that lead to the Suwannee Lake Dining Lodge. Each lodge features a central great room area complete with leather sofa and comfortable chairs close to a wood burning fireplace and flat-screen television complete with satellite service. Four beautifully decorated bedrooms come with a king, or two full-size beds, a writing desk T1 line and wireless internet, armoire, and private bathroom/shower.

The Gator’s Den and Seminole Reservation accommodations: Have a big family, or hosting a meeting? These larger, executive-style lodges each feature six spacious bedrooms with nine-foot cantilevered ceilings. Businessmen will appreciate the spacious writing desk in each bedroom, equipped with a T1 line and wireless internet service. When it’s time to relax, slip into the six-foot soaking tub and shower. Entertain in one (or both) of the deluxe rooms, which feature a private entrance, wet bar and refrigerator. Each room features patio access and amazing views of our lake; a stunning combination of luxury and privacy.
